What a Friday of yumminess

Ok I admit it I may have a fruity pebble problem that I’m not ready to give up yet. Yes I had it for breakfast again. And really if cereal is the one bad thing I eat it will be ok. Lol

Lunch was great though I had left overs from last night.  I chopped a hamburger up and added broccoli sprouts,  edamame,  cilantro,  and lettuce.  I also took half an avacado it it was amazing!!!!

I did pack to much with the apple, carrots and melon.  But that’s ok maybe I will try something new and eat them for breakfast instead of cereal lol…..

Yes I took a picture of the bottom of the salad so you can see how pretty real food is. 🙂

Just a note keep the seed with the avacado to keep it from turning brown.

I will say I went a little over board for dinner.  I made a shrimp boil with corn and potatoes and paleo sausage.  Again yes I know corn is not paleo but I have an over stock of fresh corn from the season so I have to use it.

It was nice to have a little bit of a fancy meal. Lol. Oh I almost forgot I put old bay in the boil.

How can you not like that.  The steam made it a little blurry,  sorry. 

I know people don’t care about what I eat for dinner but I am using this to hold myself accountable.  When I weigh in on Sunday I guess it will show if its working or not.  Happy Friday Everyone!!!!

 I have been getting a lot of questions lately about my Paleo lifestyle from  friends and coworkers. People wanting to know what it is, what can they eat, does it work. My answers are all the same. You can eat REAL FOOD, and yes it works. I have lost weight but I am healthier, better blood pressure, cholesterol, attitude, and no more threat of diabetes. When I first started the Paleo lifestyle I referred to this website for support and help answering my questions. I hope it helps everyone else as much as it helps me.

So tired

Ok so today at work was open house. We had to be there from 11:30 am to 7:30pm, for a teacher this seems like forever, we are use to getting home around 4pm. The PTA did cater dinner for the staff at 4pm today. They gave us sandwiches and pasta salad, it all looked AMAZING!!!!!!!! But definitely not Paleo. Thank goodness I packed something to eat today. It was a little strange and lonely being the only teacher that was not eating this amazing food. But I survived and am happy that I stayed on the Paleo path and I didn’t even want the pasta. But any who, after the open house ended a little late around 7:45pm I was exhausted!!!! But I told myself that if I slept in this morning that I had to so to the gym tonight, and I kept my promise to myself. I went to the gym after open house I hopped on the elliptical and jogged/ walked 2.0 miles. I think I may have walked more than jogged but my legs and feet are not use to standing on the cement floors are school for 10 hours a day yet. The workout did help my stress levels and it helped calm me down for the night. And I started thinking earlier, before I became Paleo I would have NEVER had the energy to go to the gym after open house. I am excited about this, but I am ready to wake up tomorrow, go to work and then go outside and run.FUN DAYS!!!!

Quick lunch BLT wraps

Ok so when I woke up at 11am I thought to myself its to early for lunch and to late for breakfast, so what do I eat? Well being the southern girl I am I thought about bacon. Before my Paleo days I loves a good BLT sandwich with mayo. So I decided to make a BLT with no bread or mayo. Instead of bread I used Bibb lettuce as my wrap placed a piece of onion and a grape tomato(cut in half). Its an easy lunch you can eat on the go.

I had three of these small bites of goodness. With my wraps I had some watermelon and two sandwich slices of bread and butter pickles and a cup of coffee with unsweetened almond milk. The whole meal was 225 calories. So yummy.

Loving life

Ok so great news I have lost 3.4 pounds this week by eating Paleo. I feel healthier, not weighed down, happier, not tired at all and so far no headaches. I use to have at least 2 headaches everyday. But I noticed this morning I have not had a headache in the last week. This makes me extremely happy, I was miserable living life in pain everyday. I will not say that the Paleo lifestyle is a cure all, but if you have tried everything and are still in a funk. Then, I challenge you to try the Paleo life for 30 days and see how you feel at the end of it. If you see no change then you have not harmed anything and you can go back to your old ways eating but if you do see a difference then you have helped yourself out. I love eating fresh fruits, veggies, nuts and lean meats. Yes it means putting thought into what you buy at the grocery store and there are not many choices of restaurants to eat at. But it is so much fun to cook and try new recipes. I just love it all.
    Ok enough of that. Last week I also had the energy to workout every day sometimes even twice a day. On the slow days I would walk at least 1.5 miles. I have never had that kind of energy but it is so empowering to say I’m going to workout and then enjoy the workout and see results. I am living and loving life right now. And I don’t think I will want to go back to my old lifestyle. But only time will tell. Until next time, eat healthy and live healthy.

Paleo Update

Ok so I have been Paleo for about 3 weeks now and I am really enjoying it. I dont even miss the old food I use to eat. My favorite food is tacos, with taco meat (Home made spices of course) with bibb lettuce as the wrapper and homemade pico. It is so YUMMMY!! The worst Paleo food I have eaten was Cauli-rice. Cauliflower that is grated and sauteed until translucent then you add cilantro. I hated it, but I also hate cauliflower. I have been tracking what I eat and it is hard to eat enough calories each day to keep losing weight but the last couple of days I have figured it out and have started losing weight again. I also have been working out regularly. I am feeling happy and healthy. =)   Today was our first delivery from the Produce box and our locally grown veggies look amazing! I cant wait to eat them.

Paleo

Ok Ok OK I know most of you are like really? another diet? And to that I say no, its not a diet it is a lifestyle. For a long time I have been wanting to get processed foods out of my diet. Well about 3 weeks ago I became very stressed out and did not want to eat anything. So, asa compromise my husband and I decided I had to eat (his idea) and that I can eat all natural real foods ( my idea). So as I fell more and more into this way of life I noticed that my feet no longer hurt, I dont have head aches, and I have a lot more energy. I am even losing a few pounds and well I wont complain about that. LOL. To save some money and also to make sure we have fresh veggies and fruit I joined the Produce box. It is a local company that get fruits and veggies from local farmers and delivers them to your house each week. The price of the box is $24.00 per week and it feeds 3-4 people. so this should be plenty for me and my husband. I highly recommend this kind of service to everyone. Not only do you get fresh produce, it helps out the local farmers. I thought it was going to be hard to convert my eating habits from burgers with buns and pizzas to lettuce wraps and burgers on sweet potato cakes instead of buns. But it was actually really easy. I dont know if it is because I feel so much better or because I know that I am doing what my body needs but I dont really miss the grains and pastas. On my husbands birthday I had a small piece of cake and let me tell you it was a BIG mistake. About 2am that night I woke up feeling like my stomach was being ripped apart. I wont make that mistake again.  I hope it keeps going so smoothly, but week 3 is flying by. I will keep everyone informed.   =)
